A diet high in nitrate has been linked to an increased risk of thyroid cancer. Nitrates are found in certain types of processed foods, particularly cured meats. They can interfere with iodine uptake by the thyroid, leading to overgrowth and potential cancer development.
Conversely, diets high in fruits and vegetables have been associated with a lower risk of thyroid cancer. These foods are rich in antioxidants, which can help protect the body’s cells from damage and prevent cancer.
