Salt iodization involves adding a small amount of iodine to salt, a staple in diets worldwide. Since its widespread adoption, it has made significant strides in preventing iodine deficiency. For instance, according to the World Health Organization, iodine deficiency affected 29% of the world’s population in the early 1990s. By the mid-2010s, due to salt iodization, this figure had fallen to just 11.3%.
